Green Chia Smoothie

This smoothie is more of a guideline than a recipe. Chia seeds, first cultivated by the Aztecs, are high in omega-3 fatty acids, vitamins, and minerals. Grinding them makes these the omega- 3s and vitamins more available to the human body. Parsley—flavorful, inexpensive, and packed with vitamins and minerals—is also a central element. The banana is there to add substance, texture, and a touch of sweetness. Other than that, feel free to play around with the ingredients and quantities.

Ingredients

  • 1 banana, peeled
  • 10 green grapes
  • ½ bunch parsley (a generous amount)
  • 1½ cups unsweetened almond milk
  • 2 tablespoons chia seeds
  • ½ lemon, juiced
  • Ice (optional)

Instructions

Add all ingredients to a blender and blend. We find that the Vitamix creates the smoothest texture, leaving no bits of parsley to get stuck in your teeth.

If it’s not blending easily or it’s too thick, add water or some more almond milk. If it’s too sweet, add more lemon juice.
